Grilled Pineapple with Rum Glaze
This recipe is a healthier alternative to the Pineapple Rum Flambe, using grilled pineapple (as opposed to pineapple sauteed in butter) and honey (as opposed to brown sugar)
1 fresh pineapple – peeled, cored and cut into rings
1 cup of white rum
juice of 1 lime
4 tbsp honey
1 fresh sprig rosemary
1. In a small bowl, combine lime juice, honey, and rum and stir with a fork. Place pineapple rings and rosemary in the marinade and refrigerate for 10 minutes.
2. Grill the pineapples on both sides at medium heat, and brush them with marinade while cooking. About 2 minutes on each side.
3. Serve warm with extra rum glaze and fresh whipped cream (or non-fat yogurt mixed with chopped fruit of choice)
